The loaf
Focaccia is the kind of bread that doesn’t need much to be memorable. Good dough, plenty of olive oil, time and a hot oven do most of the work. For our version, the focus is on a soft, open interior and a properly baked golden surface rather than an overloaded topping layer. It is simple enough to eat on its own and versatile enough to become part of a meal.

About this bake
Our Classic Focaccia is built around texture: a light, airy interior, crisp golden edges and the rich flavour of olive oil in every bite. The dough is made at high hydration and given time to rise before being gently dimpled, finished with olive oil and baked until deeply golden. The result is soft and pillowy inside, with just enough chew and caramelisation around the edges. Best eaten fresh, slightly warm, or torn apart at the table and shared. Baked in small batches in Kolhapur.
Ingredients
For a plain/classic version: Refined wheat flour (maida), water, olive oil, yeast, salt. If your actual production version uses herbs, garlic or other toppings, those should be added here exactly as used.
How it’s made
Made with a high-hydration dough, gently folded during fermentation, proofed until light and airy, dimpled by hand, finished with olive oil and baked at high heat until deeply golden.
Keeping and refreshing
Keep at room temperature in its packaging or an airtight container, away from direct heat and moisture. For longer storage, portion and freeze in an airtight bag. Warm in a preheated oven at 180°C for 5–7 minutes until soft inside and lightly crisp outside. Frozen portions can be thawed briefly and reheated the same way. Best enjoyed on the day of baking or within 2 days. For longer storage, freeze for up to 4 weeks.

Olive oil and balsamic vinegar, soups, pasta, cheese, dips, roasted vegetables, sandwiches or simply served warm on its own.
